So tasty!<\/p>\n\n\n\n<p>Add a slice of crusty bread&nbsp;to soak up the incredible sauce, plus a simple salad&nbsp;and you&rsquo;ve got yourself an incredible pasta night!<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\">Ingredients needed<\/h2>\n\n\n\n<p>This tasty, creamy pasta recipe has such wonderful flavor thanks to the combination of roasted red peppers, saut&eacute;ed shallot + garlic, cream, parmesan cheese and fresh basil. Here&rsquo;s everything you&rsquo;ll need:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Pasta.<\/strong>&nbsp;You&rsquo;ll need 1 pound of your favorite short pasta. I like to use penne pasta, but you could use bowtie, shells or elbow noodles. Feel free to substitute whole grain or whole wheat pasta for added nutritional value. Use gluten free pasta, as desired.<\/li>\n\n\n\n<li><strong>Olive oil.<\/strong> For cooking the diced shallot and garlic and making the sauce.<\/li>\n\n\n\n<li><strong>Shallot + garlic.<\/strong> Adds delicious aromatic flavor. If you don&rsquo;t happen to have shallot, sub with onion.<\/li>\n\n\n\n<li><strong>Roasted red peppers.<\/strong> Jarred roasted red peppers are so convenient and perfect in this recipe. &nbsp;<\/li>\n\n\n\n<li><strong>Vegetable broth.<\/strong> Adds flavor and is the perfect amount of liquid for the sauce.<\/li>\n\n\n\n<li><strong>Heavy cream.<\/strong> Highly recommended for a super creamy, delicious sauce. However, to keep this dish vegan, use oat milk or coconut milk.<\/li>\n\n\n\n<li><strong>Basil.<\/strong> For fresh flavor!<\/li>\n\n\n\n<li><strong>Salt + pepper.<\/strong> To bring all of the flavors together.<\/li>\n\n\n\n<li><strong>White wine.<\/strong> Optional, but I just love how it enhances the flavor of the sauce.<\/li>\n\n\n\n<li><strong>Parmesan cheese.<\/strong> Highly recommend freshly grated parmesan cheese! You can find the highest quality blocks of parmesan cheese in the speciality cheese area in most grocery stores. Here&rsquo;s a quick rundown of the process, but for full instructions, reference the recipe card at the bottom of the post.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><span style=\"font-weight: 400;\"><strong>Boil pasta.&nbsp;<\/strong>Cook the pasta according to package directions. Drain and set aside. I like to save a little of the pasta water to thin the sauce, as desired.<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\"><strong>Make the sauce.<\/strong> In a large skillet, heat the olive oil over medium heat. Add in the shallot and garlic and saut&eacute; for 5 minutes, stirring often.&nbsp;<\/span><span style=\"font-weight: 400;\">Add the shallot and garlic to a blender with the roasted red peppers, veggie broth, cream, basil, salt + pepper. Blend until creamy.<\/span><\/li>\n\n\n\n<li><span style=\"font-weight: 400;\"><strong>Mix sauce and pasta.&nbsp;<\/strong>Add the sauce and white wine to the same skillet you saut&eacute;ed the veggies in. Mix in the white wine and cook for 5 minutes. Add in the pasta and parmesan and stir to coat in the sauce and continue to stir until the cheese is fully melted. Overcooked pasta is unable to hold its shape and will be easily mushed when handled.&nbsp;<\/li>\n\n\n\n<li><strong>Salt the pasta water.<\/strong> I always recommend salting your pasta water. Cooking the pasta in salty water allows it to absorb some of the salt as it cooks, enhancing its flavor from the inside out. Here&rsquo;s some options:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Make it gluten free.<\/strong>&nbsp;Simply use a gluten free pasta of choice.<\/li>\n\n\n\n<li><strong>Make it vegan. <\/strong>Swap the heavy cream for thick oat milk or (my preference) for full fat coconut milk. You could leave out the parmesan and simply add in a little nutritional yeast, or try vegan parmesan (Violife makes a&nbsp;great one!).<\/li>\n\n\n\n<li><strong>Add protein.<\/strong>&nbsp;Feel free to toss the pasta with cooked, diced tofu, chicken breast or shredded rotisserie chicken or cooked shrimp.<\/li>\n\n\n\n<li><strong>Add veggies.<\/strong> Try adding some cooked veggies to the sauce such as spinach, eggplant, mushrooms or zucchini.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Serving suggestions<\/h2>\n\n\n\n<p>This roasted red pepper pasta is pretty much a meal on its own, but you may want to add a side, like crusty <a href=\"https:\/\/foodwithfeeling.com\/peperoncini-garlic-bread\/\" rel=\"\">Pepperoni Garlic Bread<\/a>, <a href=\"https:\/\/foodwithfeeling.com\/homemade-garlic-soft-pretzels\/\" rel=\"\">Soft Garlic Pretzels<\/a>, or a light simple side salad. You can also beef up the recipe by adding some chicken, or browning some Italian sausage in the skillet in the beginning, before the shallot and garlic.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Storing leftovers<\/h2>\n\n\n\n<p>Let the pasta cool to room temperature. Once cooled, you can place leftovers in an airtight container. Keep it in the refrigerator for up to four days.
